A multidisciplinary research team from the Departments of Biology and Chemistry at York have been studying how bacteria capture the molecule used to make the ‘cloak’ called sialic acid. The researchers have now discovered an enzymatic activity that helps in the more efficient capture of sialic acids released from our cell surfaces. As well as using the sialic acid to make the ‘invisibility cloak’ other bacteria use similar methods to capture sialic acid as a simple food source so are literally eating us from the inside!Dr Gavin Thomas of the Department of Biology who led the research said: "This novel enzyme as well as other steps required for the formation of the ‘invisibility cloak’ that we have discovered in York now offers the chance to develop novel antimicrobials against these bacteria. n the other end of the spectrum are the illnesses we get when we don’t eat certain foods. And here I’m thinking of scurvy which is covered nicely by our final food scholar Pierre Laszlo in Citrus: A History. Laszlo is a chemistry professor who is probably best known for his previous book Salt: Grain of Life and has now moved on to one of the next great essential staples citrus. Laszlo has a truly charming way of telling the story weaving his personal biography into the tale of the migration of various fruits around the world. He is careful though (and tells us he is worried about overstepping his bounds) to never let the personal overshadow the story of lemons limes grapefruits oranges and of course such exotics as ugli fruit kumquats and yuzu. Citrus is a little different than the other books. While there’s still plenty of great history in Laszlo’s account it’s a little more interdisciplinary adding to his personal tale and all that lore discussions on chemistry and three great chapters on the symbolic meanings of citrus and the image of these fruits in poetry and art.
